Healthy Lunch Idea - Kale Salad with Blueberries

Like so many, I’m a creature of habit. I do the same things before bed every night – TV, pack my gym bag, read a book. I eat the same oatmeal for breakfast every day. I grocery shop on the same day every week (at the same store, no less). You get the picture.

Another routine or habit I have is bringing a salad for lunch every day, followed by a piece of dark chocolate. Sometimes, I’ll grab pre-packaged salads like Super Spinach and Mozzarella & Tomato from Trader Joe’s, but most of the time, I make my own to bring to the office.

This delicious superfood salad is one of my favorites year-round. Plus, you can easily trade out the blueberries and quinoa for other fruits or grains if you want to mix it up.

Blueberry Spinach Salad

Ingredients (makes one salad):
½ bag of spinach, washed
¼ cup quinoa, cooked
¼ cup feta cheese
1 cup blueberries
¼ cup slivered almonds
Dressing of your choice (I like a balsamic vinegar or red wine dressing)

I am no Pioneer Woman and can barely navigate my 100 sf. apartment kitchen. That’s why there is only one direction for this salad: Mix it up!
